2 USBC COMMUNICATOR APRIL 2015
President’s Message
Judy Westphal
I
t’s times like our March General Meeting that makes the world
a bit brighter and my position within your organization so
rewarding. A packed meeting room and a standing ovation for
our 32-year life member Doris Dugan was the highlight of the
day. So many testimonials and tributes to a beautiful lady, inside
and out. Thank you, Doris, for being who you are and for
assisting in bringing the USBC to Rosarito Beach.
Dean Stalcup did an amazing presentation on the Flying
Samaritans. This is a non-profit organization assisting many in
our community that otherwise would not receive the treatment
they need. They need volunteers and donations desperately
right now. Let’s not let them down.
We have been so blessed with a warm, sunny winter compared to
the Midwest and East Coast. It has afforded us the opportunity
to take advantage of all the wonderful events going on. There
are many more in the offing and I look forward to seeing you all
at as many as possible. In the meantime please stay healthy,
happy and love much!

T
he March 7 Meeting, held at the
Rosarito Beach Hotel, was called to
order by First Vice President Paul
Flowers at 10:07AM. President Judy
Westphal introduced Board members.
Greeter Carmen Valencia introduced
guests Jennie Luna, Andre Gidding, Deana
Trowbridge, Carmen Dominquez, and Janet
Hernandez.
Judy Westphal addressed the issues of
not enough waiters, food being served cold,
wrong items, etc. She has sent a letter to the
restaurant manager and hotel.
Judy then proceeded to March birthday
and anniversary celebrations: Larry Gorman,
72; Carmen Valencia, 87; Jack Westphal, 83;
and Judy Westphal, 72. Lynn & Lou Bell
celebrating 56 years of marriage.
The February Meeting Minutes were
approved as presented.
Treasurer Milo Goehring gave his report
(see page 3).
Restaurant Tour Chairperson Sandy
Eddahbi announced on Sunday March 15th at
1:00PM Mi Casa at San Antonio del Mar will
serve a 3-course luncheon for $15.00. May
20th will be the Valle del Guadalupe bus trip
(see page 8).
Barbara Rock will host the March 21 St
Pat's Potluck. Joie Thomas and Andre Gidding
are assisting.
Dean Stalcup of the Flying Samaritans
spoke on the history of the organization
covering its start in 1961, services provided,
its current planned fund-raisers and the
need for volunteers. Judy Westphal thanked
4 USBC COMMUNICATOR APRIL 2015
him and asked attendees to donate and volunteer.
HONORED GUEST Judy Westphal moved Doris Dugan front and
center. Doris was a founder of the society in 1983, still works with Bill
Clark on the Nominating Committee. Doris shared many stories about
moves, barbeques, Halloween parties, and then some of the originals
that were in the audience — Carmen Fisher, Lou and Lynn Bell. Bill
Clark was asked for a few words about Doris saying “She is a poster
child for a good Samaritan living in Mexico. She has left a big foot
print in the Baja.” Dorothy Southern then reminded her of the RV
caravanning and the fun potlucks at Freddy’s. Carmen Fisher
commented on Doris’ commitment to giving. Doris closed with “I love
it here and will spend all my days here.” Judy presented her with a
certificate of appreciation, a plaque and flowers.
Amy Valenzuela gave her Sunshine and Education Reports (see
page 6). Dorothy Southern commented on Bruce’s current condition.
He had a nasty fall on the previous Wednesday and is now at the VA
in California. Updates to come. Dorothy then asked if the attendees
would possibly donate their pocket change to help our college
scholarship students with additional book, test and transportation
expenses. Milo Goehring and Tom Goodman tallied the funds for
totals of $58.81 and 446 pesos.
Dave Eliot gave his Membership Report (see page 3).
Tila Ortiz, new Speakers Chairperson, solicited ideas from the
membership and even that some of us could speak about our life’s
experiences—just contact her.
A trip to the Del Mar Races will be sometime probably in July
with a limit of 32.
Judy Westphal asked Julia Prine to speak about the need for
chairpersons for: June and September potlucks, November
Thanksgiving Dinner and December Holiday Ball. Past hosts are
available and willing to assist. Joie Thomas and Andre Gidding signed
up to host the June potluck.
Announcements were made for Cruz Roja (Paul Flowers), Flying
Sams (Dean Stalcup), Theatre Guild (Milo Goering), Friends of the
Library (Carmen Dominguez), Baja Spay & Neuter (Cili Rupe), Boys &
Girls Club and MS Walk (Baja O’Brien), Gorgeous Women & Handsome
Hunks Calendars (Chuck Smith).
Nate Prine sold 50/50 tickets, collecting $100 with Miss Morgan
holding the winning ticket.
The meeting was adjourned by Paul Flowers at 11:57AM.

The Mongolian Grill
Wednesday, April 22, 5:00PM
Located at Km. 30
Reservation & food selection required
Seating is limited
Cash only
S
o far this year the Restaurant Tour
has visited three relatively new
establishments. I think it’s time to
visit one that’s been around for a while. I
visited the Mongolian Grill for a Valentine’s
Day dinner and, as always, loved it. They
serve fresh, healthy, interesting food at a
reasonable price, and give us a little ethnic
food vibe all at the same time — all a
good thing. If you haven’t been there
recently you will be happy to rediscover
this small gem.
Chris and Lee are offering us three food
selections at a great price — including a
beverage (milk, tea, iced mango jazminegreen tea or other soft drink) and a gelato
for dessert.
1. Miso Salmon with Rice, Veggies and
side salad for $13.00
2. Mongolian Beef with Rice, Veggies
and side salad for $13.00
3. Asian Chicken Salad, either Thai or
Mandarin Orange, with 2 Slices of Thai
Chicken Pizza for $11.00
Reservations: seddahbi@aol.com
213-787-5091
I thought you would enjoy knowing a little
about our hosts. Chris and Lee lived in
Diamond Bar, California before “retiring” in
Baja. Neither of them had restaurant
experience. Chris worked in Finance for
Northrop Corporation for 30 years, and
Lee owned and operated a private preschool and kindergarten for 17 years.
They both love eating street tacos here in
Baja, but Lee was missing her regular dose
of Mongolian BBQ when they first moved
here eight years ago. They felt that the
people here in Baja could benefit from a
place that served more vegetables, and
initially thought that it wouldn’t be too
difficult to open this type of restaurant.
Although it has taken a few years to catch
on, their clientele is now about half
American and half Mexican nationals.
So please come and join us as the April
Restaurant Tour visits the Mongolian Grill.

Celebrating

New Year
At our February Potluck, hosted by Milo & Cary Goehring and
Paul & Jo Flowers, great decorations, food and crowd.
S
econd semester is underway for our two college students and all is
well. Daniel has changed his major to Microbiology in Engineering.
Jessica is pouring over the books in second semester of medical
school. Cards were sent to encourage them to “hang in there” and
continue their ambitious goals.
April 30th is Children's Day for grade school students. We are joining
the kindergarten parents for a “nutritious” party. Skewers of fresh fruit,
oatmeal and raisin cookies and the like will be the healthy food. A
presentation will be offered for parents to help them feed their children
good food. All are welcome. We go about 10:00 and will share the day
with the parents as well.

W
e continue to keep the "boys" in our prayers: Bud Loury is home
from rehab. Several neighbors have been over to visit and report
often. Nate Prine is doing what the doctor says and keeps a twinkle in
his eye. Tom Reeve is holding his own and limits his time on e-mail, so
send him notes in the form of a card which he will enjoy reading. His
address is 12049 Lacie Lane, Lakeside CA 92040.
We wish Gloria Cullipher — a neighbor, dear friend and USBC member
— a speedy recovery from kidney surgery.
Now, the rest of you, stay well.

WINE VALLEY TOUR – MAY 20TH

Casa Encinares B&B and Restaurant
n the grand style, created by Tom Reeve, the
Restaurant Tour will continue to do bus trips
twice a year to, hopefully, interesting and
delicious destinations. When we first committed to
do this job, the first thing Penny said was, “Let’s
do the Wine Valley.” So that is how we are
starting. Thanks to a connection and a
recommendation from Greg Richards, we have
been able to plan a day that will be one to go
down in the annals of the Great Restaurant Tour
History Book.
